PEAR & APPLE CRUMBLE

PREP 15 MINS COOK 35 MINS SERVES 4 (AS AN OCCASIONAL DESSERT)

1 large (200g) green apple, peeled, cored, cut into 3cm pieces
2 small (360g) pears, peeled, cored, cut into 3cm pieces
1 Tbsp water
2 tsp fresh lemon juice
2 tsp sugar-free maple syrup
45g (½ cup) rolled oats
2 Tbsp finely chopped walnuts
2 tsp pepitas (pumpkin seed kernels)
1 Tbsp olive oil
1 Tbsp sugar-free maple syrup, extra
130g (½ cup) reduced-fat Greek-style natural yoghurt, to serve

1 Preheat oven to 180°C (fan-forced).

2 Place the apple, pear and water in a small saucepan over medium heat. Cover and cook for 8 minutes or until just tender. Stir in the lemon juice and maple syrup. Transfer to a 750ml (3 cup) ovenproof dish.
