Green curry beef ribs

SERVES 6PREP TIME 10 MINUTESCOOK TIME 9 HOURS 15 MINUTES

1 tablespoon olive oil6 (3kg) beef ribs, halved3 shallots, sliced thinly2 cloves garlic, chopped finely2 tablespoons freshly grated ginger1 stalk lemongrass, white part only, chopped finely½ cup (150g) green curry paste2 x 400ml cans coconut cream1 tablespoon brown sugar4 bok choy (600g), halved or quartered175g broccolini, trimmedMint leaves, lime wedges, to serve

1 Preheat a 6-litre (24-cup) slow cooker on low.

2 Heat oil in a large frying pan over high heat. Cook rib pieces on both sides for 5 minutes or until browned. Transfer to cooker.

3 Add shallots, garlic, ginger and lemongrass to frying pan. Cook,
