OAT & SEED LOAF
MAKES 1 MEDIUM LOAF / PREPARATION: 15 MINS / STANDING: 10 MINS / BAKING: 40-50 MINS
The easiest, most delicious wheat-free seed loaf I’ve ever tasted. Oats can be included in moderation in a low-carb diet.
625ml (2½c) oats
250ml (1c) mixed seeds, including sunflower, sesame and linseed
60ml (¼c) psyllium husk
12,5ml (2½t) baking powder
5ml (1t) salt
4 eggs
45ml (3T) coconut oil, melted
250ml (1c) water
15ml (1T) apple cider vinegar
mixed seeds or sesame seeds for sprinkling
TO SERVE

Preheat the oven to 180°C. Grease a small bread tin with nonstick spray and line the bottom with baking paper. Grease again.
1 Mix all the dry ingredients well.
2 Beat the eggs, add the coconut oil, water and vinegar and beat well.
Add the dry ingredients to the egg mixture and mix well. Leave to stand for 10 minutes until
