RAMEN with STEAK STRIPS
SERVES 4 / PREPARATION: 10 MIN / COOKING: 30 MIN
STEAK
300g beef or pork steak
5ml (1t) Chinese five spice
salt
15ml (1T) oil
SOUP
15ml (1T) oil
2 spring onions, chopped
2 garlic cloves, chopped
10cm fresh ginger, chopped
1-2 red chillies, chopped
250g mushrooms, of choice
500ml (2c) beef stock
500ml (2c) hot water
125g wheat or egg noodles
300 g baby spinach
15ml (1T) soy sauce
15ml (1T) fish sauce
15ml (1T) rice vinegar or lime juice
30ml (2T) sweet chilli sauce
TO SERVE
4 eggs, boiled and halved
15ml (1T) sesame seeds
fresh herbs (optional)
1 Steak Season the steak with the spices and salt, then rub oil all over it. Heat a pan and seal the steak on both sides. Turn the heat down and fry the steak for another 2 minutes or until cooked to your liking. Remove and set aside.
2 Soup Heat the oil in a pot and fry the spring onion, garlic, ginger and chilli for a minute, then add the mushrooms and stir-fry for 5 minutes.
3 Add the stock and hot water and bring to the boil. Add the noodles and simmer for 2 minutes.
