CITRUS CHICKEN
The humble chicken gets a standing ovation in this delectable dish of sweet and tangy flavours, crispy chicken skin and juicy tender meat. Next time you see a lemon and orange lazing around in the kitchen, grab them and make this citrus chicken. The flavours are in the pan juices, so be sure to drizzle some over the chicken just before serving.
SERVES 4-6 PREPARATION: 15 MIN COOKING: 1 HOUR & 15 MIN
15ml (1T) crushed dried chillies
45ml (3T) chicken masala
salt and pepper
4 garlic cloves, chopped
45ml (3T) oil
8-10 chicken pieces (2,5 kg)
1 lemon, sliced horizontally
1 orange, sliced horizontally 60ml (¼c) butter, melted
TO SERVE
rice and fresh green salad
Preheat the oven to 220°C.
1 In a large bowl, combine the spices, salt, pepper, garlic and oil and coat the chicken pieces with the mixture.
