✔ 200g fresh peas, shelled or frozen ✔ 200g broad beans, podded or frozen ✔ 400g asparagus, trimmed ✔ 3 tbsp olive oil ✔ 40g parmesan cheese, finely grated ✔ small handful of fresh mint, chopped ✔ 1 lemon, zested and juiced ✔ salt and pepper ✔ 1 bag of baby spinach ✔ 125g buffalo mozzarella cheese
