PLUMS IN RUM WITH RASPBERRIES
Makes: about 3 litres
Preparation time: 30 minutes
- 1,3kg plums
- 400g raspberries
- 1kg sugar
- 1 cinnamon stick
- 700ml brown rum (54% alc by vol)
1 Wash the plums and rub dry. Cut in half and remove the stones. Carefully wash the raspberries and pat dry. Carefully mix the fruit with the sugar. Set aside for 20 minutes to draw.
2 Take a large jar or rum pot (well washed and dried) and add the fruit, sugar, cinnamon stick and rum. The fruit should be covered by the rum. Cover the jar. Keep in a cool, dark place for at least 3 months to draw. Serve the fruit and some of the sauce with ice cream. The rum syrup can also used for cocktails or desserts.
STRAWBERRY JAM WITH LEMON AND MINT
Makes: about 6 jars (250ml each)
Preparation time: 30 minutes
- 1kg strawberries
- 1kg sugar
- 8 mint leaves
- 10ml lemon zest
- 75ml lemon juice
Wash the strawberries well and pat dry. Cut any small berries in half, cut bigger ones into quarters or eighths. Wash the mint and pat dry. Chop finely. Add the strawberries with the sugar, lemon zest and lemon juice to a saucepan and slowly bring to the
