Creamy Artichoke and Smoked Trout Crostini
Makes 18, Prep and Cook 40 mins
½ long sourdough baguette
(about 25cm)
2 tblsps olive oil
105g packet smoked rainbow
trout fillets, flaked
¼ cup drained finely chopped
semi-dried tomatoes
¼ cup finely chopped pitted
Sicilian olives
Small fresh parsley leaves,
to garnish
CREAMY ARTICHOKE DIP
½ cup mayonnaise
½ x 280g jar marinated
artichokes, drained,
chopped
2 tblsps finely grated parmesan
½ small clove garlic, crushed
Cut bread diagonally into 1cm thick slices.
