Bring a plate TO SHARE

ZA’ATAR LAMB WITH FETA, APRICOTS AND MINT

SERVES 4-6 PREP AND COOK: 1 HOUR, 10 MINS

1.3kg Lamb Easy Carve Leg Roast, unrolled
2 cloves garlic, crushed
2 tblsps olive oil
½ x 250g tub Persian feta
½ cup thinly sliced dried apricots
¼ cup chopped pistachios
¼ cup sliced fresh mint

ZA’ATAR

3 tsps sumac
3 tsps sesame seed, toasted
2 tsps dried oregano leaves
2 tsps ground cumin
2 tsps ground coriander

1 To make za’atar, combine all ingredients in a small bowl.

2 Place lamb in a large dish. Add za’atar, garlic and oil. Season with salt and pepper and rub all over to coat.

Heat an oiled barbecue grill plate over a medium to high heat. Add lamb. Cook, for about 5 minutes on each side, or until browned. Reduce heat to medium to low. Close lid and cook for a further 35 to 40 minutes for medium, or until cooked to your liking. Remove and rest, loosely
