PISTACHIO AND GREEN OLIVE STUFFED CHICKEN

SERVES 6 PREP AND COOK: 1 HOUR, 10 MINS

50g butter
3 green spring onions, finely chopped
¼ cup pitted Sicilian olives, chopped
1 cup seasoned stuffing mix
½ cup chopped pistachio kernels
1 egg, lightly beaten
2 tsps finely grated lemon rind
2 tblsps lemon juice
6 chicken Marylands
Steamed baby potatoes, green beans and lemon wedges, to serve

1 Set aside 2 tsps of the butter. Melt remaining butter in a large frying pan over a medium to high heat. Add onions and olives. Cook, stirring, for about 2 minutes, or until onions are soft.

Transfer to a large bowl. Stir in stuffing mix, pistachios, egg, lemon rind and juice. Season with salt and pepper. Mix
