CORN CHOWDER

PREP 10 MINS COOK 35 MINS SERVES 4 (AS A LIGHT MEAL)

1 tbsp olive oil
1 small brown onion, chopped
8 green shallots, diagonally sliced
400g baby Zerella Spud Lite Potatoes, peeled and halved
750ml (3 cups) saltreduced vegetable stock or gluten-free stock
250ml (1 cup) water Freshly ground black pepper
500g fresh corn kernels (see Cook’s tip)
200ml light milk
1 bunch chives, chopped

1 Heat the oil in a medium saucepan over medium heat. Add the onion and most of the green shallots (reserve about 2 tbsp). Cook, stirring often, for 6-8 minutes or until the onion softens.
