always a lilt, banana bread gets an aussie makeover with gaytime!

makes 1 loaf | prep 15 mins (+ cooling)

Shortcut your baking with ice cream!

4 Streets Golden Gaytime ice-creams
 3 large overripe bananas, well mashed
 2 eggs, lightly whisked
 300g (2 cups) self-raising flour, sifted

Preheat oven to 130°C/160°C fan forced. Grease an 11 x 21cm (base size) loaf pan and line with baking pdper, allowing the paper to overhang the long sides. Line a tray with baking paper.  Use a small sharp knife to cut outer coating from Gaytimes. (They will break up slightly, but try to keep the pieces as large as possible.) Place outer coating on prepared tray ond place in the freezer until required. Place ice-cream, discarding the sticks, and any remaining smaller pieces of coating in a large bowl. Use  Add the banana and egg to the bowl and mix until combined. Fold through the flour. Transfer dough to prepared pan and bake for 40 minutes or until a skewer inserted into the centre comes out clean. Set aside for 10 minutes to cool slightly.  White still warm, lay the pieces of Gaytime coating over the top of the loaf (it will melt and drizzle). Set aside for 10 minutes to cool slightly then use the paper to transfer to a wire rack. Slide the paper out from underneath the bread and set aside to cool completely. Cut into slices to serve.
