Sunday market salad jar

MAKES 1 SERVING

Choose produce in a variety of colours – it not only looks more appetizing but also provides a wide range of nutrients.

150g raw baby beetroot, trimmed and scrubbed
7-8 radishes, trimmed
7-8 small tomatoes
Small handful of baby spinach leaves
1⁄4 cucumber, peeled
75g buffalo mozzarella
½tsp mustard seeds
3tbsp fruity olive oil
1tbsp freshly squeezed orange juice
1tsp white wine vinegar
Small handful of fresh basil
Salt and freshly ground black pepper
1ltr Mason/Kilner jar with a lid

Place the beetroot into a saucepan of cold water and bring to the boil. Cook
