All-year-round tomato & mozzarella salad

1 oven-ready precooked ciabatta loaf, torn into bite-sized pieces
6 tomatoes, halved
4 tbsp olive oil, plus extra for drizzling
200g mixed colour vine cherry tomatoes, halved
1 tsp caster sugar
1-2 tsp red wine vinegar
½ garlic clove, grated
2 mozzarella balls, drained and patted dry
