Honey panna cotta with apricots in thyme syrup

PREP + COOK TIME

1 HOUR (+ COOLING & REFRIGERATION)

SERVES 8

3 teaspoons powdered gelatine
¼ cup (60ml) cold water
2 1 /3 cups (580ml) buttermilk
½ cup (125ml) cream
½ cup (175g) honey

APRICOTS IN THYME SYRUP

2 cups (500ml) water
½ cup (175g) honey
2 teaspoons fresh thyme leaves
12 small apricots (600g),halved, stones removed
1 tablespoon lemon juice

1 Sprinkle gelatine over water in a small heatproof jug. Stand jug in a small saucepan of simmering water, stirring until gelatine dissolves.
