4 medium eggs

2x250g pack ready-to-heat basmati rice

1tbsp sunflower oil

1 large onion, finely chopped

1 red pepper,

finely chopped

3tbsp medium curry paste

325g frozen peas, defrosted

500g hot smoked mackerel or salmon, flaked into large chunks

Small handful parsley, chopped

1 lemon cut into wedges

Mango chutney, to serve
