no-knead za’atar flatbread with middle eastern fixings

One of my favourite ways to eat is to graze. Ploughman’s lunch is my idea of heaven, as is a bunch of dips and pickles served with bread to scoop. This spread is somewhere in between the two. I’m pretty fussy about bread, so if I don’t have a great fresh, store-bought loaf to hand, I’ll make a simple bread like this one. It’s as hands-off as bread-making gets and there’s no kneading required.

SERVES 4 PREP 30 mins COOK 45 mins (plus proving)

1 Spanish onion, thinly sliced into rings (on a mandolin if you have one)Juice of 1 lemon, plus extra lemon wedges to serve2 tablespoonsJuicy tomatoes, sliced, marinated feta, pickled chillies, rocket, mint and basil, to serve
