BLACKBERRY & GOAT’S CHEESE TARTS
Serves 2-4 Takes 35 minutes
INGREDIENTS
• 1 tbsp olive oil
• 15g/½oz butter
• 2 red onions, peeled, halved and thinly sliced
• 2 tsp caster sugar
• 150g/5oz blackberries
• 3 sprigs fresh thyme, leaves torn, plus a little extra for garnish
• Salt and black pepper
• 1 x 375g packet ready-rolled chilled puff pastry, or defrosted if frozen
• 1 egg, beaten, for glazing
• 100g/4oz goat’s cheese, cut into 4 thin slices
To finish
• 1 tbsp red wine vinegar• 2 tbsp olive oil• ½ tsp caster sugar• ½ tsp Dijon• 100g/4oz mixed rocket, spinach and watercress salad• 175g/6oz raspberries
