ONION TEAR & SHARE WITH BAKED CAMEMBERT

Makes 1 platter (6-8 people as a party snack share) Preparation time 30 minutes, plus proving Cooking time 40 minutes

INGREDIENTS

• 115ml/4¼fl oz whole milk
• 115ml/4¼fl oz water
• 2 tsp active yeast
• 500g/1lb 2oz strong flour, plus extra for dusting the work surface
• 2 tsp salt
• 75g/3oz caster sugar
• 2 medium eggs, beaten (reserve some for glazing)
• 100g/4oz butter, softened
• 50g/2oz crispy onions
• 50g/2oz diced pancetta, fried crisp

To serve

• 1 camembert
• 1 clove garlic, peeled and finely sliced
• 3 sprigs of fresh rosemary, broken into pieces
