COFFEE, WALNUT AND CARDAMOM CAKE

INGREDIENTS
• 4-6 cardamom pods, husks removed and seeds finely ground • 4 tsp instant coffee granules • 225g butter, softened • 125g golden caster sugar • 100g light muscovado sugar • 4 eggs, lightly beaten • 225g plain flour • 1 tbsp cocoa powder • 2 tsp baking powder • 1 tsp bicarbonate of soda • pinch of salt • 2 tbsp whole milk • 100g walnuts, chopped and toasted For the walnut praline • 100g golden caster sugar • 100g walnuts For the meringue buttercream • 220g golden caster sugar • 4 egg whites • 250g butter, softened • 4 tsp instant coffee granules
METHOD
1 Preheat oven to 180°C/ 160°C Fan/ Gas Mark 4. Dissolve coffee granules in 3 tsp of boiling water.
2 Beat the butter, golden caster sugar and light muscovado sugar until pale and light. Gradually add the beaten eggs, stirring continuously. Add the cardamom seeds and coffee and mix to combine. Sift in the flour, cocoa powder, baking powder, bicarbonate of soda and salt. Add the milk and mix thoroughly until the batter is smooth. Add the walnuts and fold.
