I’ve never been a domestic goddess – the smoke alarm goes off when I cook! I’m a huge fan of sauces in jars and microwave rice. I’d rather spend time making hats to match my meals instead of cooking. That’s why this cookbook has lots of shortcuts. And plenty of sweetness, because life’s too short not to enjoy dessert. Remember, it’s okay to have cereal for dinner sometimes!

Restful pumpkin & chicken risotto

SERVES 4-6 PREP + COOK TIME 1 HOUR

500g butternut pumpkin, peeled, cut into 2cm pieces
1 tablespoon finely chopped rosemary
2 tablespoons extra virgin olive oil
