BEEF & BACON SKEWERS WITH GREEK SALAD & FLATBREAD
SERVES 4 PREP 15 MINS COOK 10 MINS
• 500g beef rump steak, trimmed, cut into 2.5cm cubes
• 8 button mushrooms, halved, (or 16 very small)
• 1 zucchini, halved, cut into 2cm pieces
• 2 slices shortcut bacon, quartered
• soft pita bread, tzatziki dip, to serve
GREEK SALAD
• 2 × 250g cherry tomatoes, halved
• 2 Lebanese cucumbers, coarsely chopped
• ½ red onion, thinly sliced • 200g marinated Greek olives
• 200g marinated feta, crumbled
• ¼ cup olive oil
• 2 tbsp red-wine vinegar
• 1 tsp dried oregano
1 Thread beef, mushrooms, zucchini and bacon onto 8 pre-soaked bamboo skewers.
Spray a chargrill or barbecu plate with oil
