WHAT’S IN THE AIR FRYER? Breakfast edition

Corn & sweet potato hash browns with sausages

PREP + COOK TIME 1¼ HOURS (+ REFRIGERATION) SERVES 4

750g chopped orange sweet potato cooking oil spray
2 trimmed corn cobs (500g)
2 green onions, chopped finely
4 breakfast sausages (500g)
½ cup (90g) rice flour
2 eggs
1¾ cups (135g) shredded coconut to serve: baby spinach leaves and tomato chutney

Pull out the pan and basket of a 5.3-litre air fryer. Place sweet potato in basket and spray with oil. Slide pan and basket back into appliance. Set temperature to 180˚C and set timer for 20
