Spiced prawn po’boys

PREP + COOK TIME 35 MINUTES SERVES 4

2 eggs
¾ cup (55g) panko breadcrumbs
1 tablespoon Cajun seasoning
16 uncooked prawns, peeled, deveined olive oil cooking spray
1 long baguette
⅓ cup (100g) mayonnaise
1 baby cos lettuce (180g), leaves separated
2 medium tomatoes (300g), sliced thinly
3 gherkins, cut into rounds to serve: extra mayonnaise, chopped chives and extra gherkins

1 Lightly beat eggs and 1 tablespoon water in a shallow bowl. Combine breadcrumbs and seasoning in a second shallow bowl. Dip prawns in egg, then coat in breadcrumb mixture. Spray generously all over with cooking spray.

2 Preheat a 7-litre air fryer to 180°C for 3 minutes.

3 Taking care, place prawns, in a single layer, in the air fryer basket; cook for 6 minutes, turning halfway through cooking time, until golden brown and cooked through.

Trim ends from baguette and discard; cut into four even pieces, then split horizontally, being careful not to cut all the way through. Spread bases with mayonnaise, then fill with lettuce, tomatoes, gherkins
