Baked cod
SERVES 4
4 cod fi llets
30g (1oz) butter
2 onions, finely chopped
100g (3½oz) fresh breadcrumbs
Grated zest of 1 lemon
1tbsp parsley, fi nely chopped
1tbsp freshly squeezed lemon juice
100g (3½oz) Opies Pickled Walnuts, chopped
Salt and freshly ground black pepper
1 Preheat the oven to 180°C/Gas Mark 4. Cut four squares of foil to wrap around each cod fillet and grease slightly.
2 Place one piece of cod on each square of foil and season with salt and pepper.
Melt the butter in a frying pan and cook the onion until soft, then stir in the breadcrumbs, parsley, lemon juice and pickled walnuts.
