BLUEBERRY & STRAWBERRY ICE LOLLIES
MAKES: 6-8 LOLLIES / PREPARATION: 5 MIN / COOKING: 5-10 MIN / FREEZING: 4 HOURS OR OVERNIGHT
► 375ml (1½c) blueberries, fresh or frozen
► 250ml (1c) strawberries, fresh or frozen
► 60ml (¼c) castor sugar
► 500ml (2c) double cream yoghurt
► 250ml (1c) cream, milk or coconut milk
► 5ml (1t) vanilla essence
► grated zest of 1 lemon
Keep 6-8 ice lolly moulds handy.
1 Put the blueberries, strawberries and castor sugar in a pot or saucepan and heat until the sugar has dissolved. Remove from the heat and set aside to cool.
