VEGGIELICIOUS DESSERTS
SUMMER SMOOTHIE BOWL
This is my favourite breakfast for hot mornings when you need something cooling but also full of goodness and packed with nutrients to sustain you all day.
SERVES 4 PREPARATION: 4 MIN COOKING: 10-15 MIN COOLING: 30 MIN
GRANOLA TOPPING
250ml (1c) oats
250ml (1c) millet
60ml (¼c) mixed flaxseed
200g pre-soaked nuts and seeds, roughly chopped (your choice of nuts and seeds)
5ml (1t) ground cinnamon
5ml (1t) ground ginger
2,5ml (½t) Himalayan salt
60ml (¼c) honey
50ml (10t) coconut oil
SMOOTHIE
2 frozen bananas, peeled
5 frozen strawberries
15ml (1T) cocoa powder 125ml (½c) oat milk
1 ice cube
TO SERVE
fresh strawberries and banana slices
Preheat the oven to 160°C. Line a baking sheet with baking paper.
1 Granola topping Mix all the dry ingredients for the granola topping except the spices and salt.
2 In a separate bowl, mix the spices, salt, honey and coconut oil, then pour into the nut and oat mixture and mix until well combined.
