Bean and potato curry
Packed full of beans this curry is an excellent source of fibre and healthy cholesterol, and great for digestion.

2tbsp vegetable oil½tsp cumin seeds½tsp black or brown mustard seeds3 bay leaves1 cinnamon stick1 star anise1 banana shallot, thinly sliced2 garlic cloves, finely chopped2.5cm ginger, finely chopped2tbsp mild curry powder1tbsp tamarind paste½ tsp sugar300g baby potatoes, pre-boiled100ml coconut milk1 x 200g can red
