Sausage, cranberry and thyme turkey

• 15g butter
• 1½ red onion, chopped
• 1 garlic clove, crushed
• 185g sausages, skins removed
• 1tbsp chopped thyme leaves
• ½tbsp chopped sage leaves
• 1tbsp chopped parsley
• Zest and juice of 1 lemon
• 30g dried cranberries
• 12 rashers streaky bacon
• 1.1kg boneless rolled turkey breast joint
• 2tbsp chicken seasoning
• 2tbsp olive oil
• Several thyme leaves
