BEEF CARPACCIO

A delicious shared starter that kicks off any communal meal on a high note: thin slices of perfectly braaied beef fillet – golden brown on the outside and pink inside – served with a spicy sauce or homemade mustard.
Ingredients
(serves 6-8 as starter)
• 800 g beef fillet (you could also use venison)
• a generous rub of sea salt flakes (we used Maldon)
• 1 teaspoon coarsely crushed rainbow peppercorns
• 2 tablespoons good olive oil, plus extra for serving
• 1 red onion, thinly sliced
• 1 small lemon
• 2 tablespoons ready-made horseradish sauce
• 80 g watercress or rocket (optional)

1 Rub the salt, pepper and half the olive oil onto the beef fillet.
