HOW TO ROAST A TURKEY
■ 1 free-range bronze turkey■ Pure sea salt■ Selection of fresh herbs – thyme, rosemary and bay leaves work well■ 2 bulbs of garlic, halved■ 4 onions, halved
1 Preheat the oven to 180°C/160°C fan/gas mark 4.
2 It is really important to take your turkey out of the fridge nice and early on the day you plan to cook it. You want to allow it to come up to room temperature, so the meat isn’t shocked when you place it in the oven.
3 Pat the turkey dry with kitchen paper and place it into a suitably sized roasting dish. If the legs overhang, simply wrap a bit of foil around them and build a trench channelling any liquid back into the dish.
