1 teaspoon cooking oil (any kind)1 small onion, peeled and chopped (see page 5)2 garlic cloves, peeled and chopped (or ½ teaspoon garlic powder)1 teaspoon peeled and minced fresh ginger1 small zucchini, diced (or 1 to 2 cups chopped or shredded vegetables, see headnote)4 cups low-sodium vegetable or chicken broth1 (14-ounce) package firm tofu, drained and cubed2 cups (or more) chopped greens, such as spinach, kale, or arugula2 cups cooked brown rice (see page 5)Salt (if needed)
