Orange & fresh ginger cupcakes

50ml (2oz) Bonne Maman Bitter

Orange Marmalade

75ml (3oz) golden syrup

100g (3½oz) light soft brown sugar

125ml (4fl oz) vegetable oil

50g (2oz) piece of fresh root ginger, peeled and finely grated

1 level tsp bicarbonate of soda

175g (6oz) plain flour

½ tsp ground cinnamon

¼ tsp ground black pepper

a pinch of ground cloves

1 large free-range egg

To decorate

75ml (3fl oz) double cream

icing sugar

125g (4oz) mascarpone cheese

25g (1oz) finely chopped toasted walnuts

1 Preheat the oven to 180°C/Gas Mark 4 and line a 12-hole cupcake tin with paper cases.
