Double chocolate espresso muffins

MAKES 12

200g (7oz) plain flour

4 tbsp cocoa powder

½ tsp salt

tsp baking powder

75g (2¾oz) caster sugar 

60ml (2fl oz) vegetable oil or use other tasteless oil

125ml (4½fl oz) plain yoghurt

2 free-range eggs

125ml (4½fl oz) Arctic Coffee

Intenso icing sugar, for dusting

100g (3½oz) dark chocolate chips

1 Preheat the oven to 180°C/Gas Mark 4. Line a 12-hole muffin tin with muffin cases.

2 Combine the flour, cocoa powder, salt, baking powder and sugar in a bowl. Pour over the oil, yoghurt, eggs and Intenso, then stir until fully combined.
