Mince makeovers

Loaded sweet potatoes

SERVES 6 PREP + COOK TIME 50 MINUTES

1 tablespoon extra virgin olive oil
1 large (300g) brown onion, chopped finely
2 cloves garlic, crushed
1 small (70g) carrot, chopped finely
1 small (150g) red capsicum, chopped finely
1 (150g) celery stalk trimmed, chopped finely
500g beef mince
1 tablespoon mild American-style mustard
½ cup (140g) tomato sauce
⅓ cup (80ml) beef stock
6 small (1.5kg) kumara
1 cup (120g) grated pizza cheese (see note)
⅓ cup small parsley leaves mixed leaf salad, to serve

Heat oil in a large frying pan over medium heat; cook onion, garlic, carrot, capsicum and celery, stirring, for 10 minutes or until vegetables soften andwith salt and freshly ground pepper. Increase heat to high, add beef; cook, stirring, for 5 minutes or until browned.
