PAPAYA CHEESECAKE GALETTE WITH PASSIONFRUIT TOFFEE
SERVES 6
2 sheets frozen puff pastry, partially thawed
1 egg, lightly beaten, for the egg wash
250g spreadable cream cheese
¼ cup (30g) pure icing sugar
1 tsp vanilla bean paste
½ red papaya, cut into thin wedges
½ cup (110g) caster sugar
2 passionfruit, halved
¼ cup (25g) flaked almonds, toasted
Preheat oven to 220°C. Line a large baking tray with baking paper.
