Ingredients

(for 4 servings)

4tbsp | ¼ cup amaranth seeds
400g | 2 cups strawberries
½tsp vanilla extract
750g | 3 cups low-fat Greek yoghurt
1tbsp honey

Method

1 Heat a dry frying pan and toast the amaranth seeds, shaking the pan all the time, for about 1 minute. Set aside to cool.

2 Set aside 4 whole strawberries. Slice the remainder, and set half of the strawberry slices around
