STUFFED BUTTERNUT SQUASH

Squash takes on a wonderful caramelised sweetness when roasted. With a punchy filling, these beauties make an impressive veggie main that’s simple enough to rustle up midweek.

2 butternut squash

2tbsp olive oil

2 red onions, chopped

2 garlic cloves, sliced

10 steams chard, chopped

6tbsp breadcrumbs

Few stalks of fresh thyme, leaves picked

100g feta cheese, crumbled
