Tahchin – Saffron Rice Cake with Chicken

Tahchin literally means to arrange at the bottom, which is the whole point of this dish. The perfect Tahchin should be a beautiful, golden, crunchy cake of saffrony rice goodness. For the best results, it is important to use a good quality non-stick oven-proof pan, with just enough depth to give it a cake-like height, but enough surface area to give you the maximum crunchy shell. Tahchin is perfect for entertaining, as you can prepare the mixture in advance and put it in the oven at the last minute. I love to eat Tahchin with a side of thick, creamy yoghurt and some fresh chillies.
