EASY RICE PUDDING WITH JAM

You can’t beat the comfort from a rich and creamy rice pudding and, with only five ingredients, this is a great one to whip up during the week.

PER SERVING

335 cals, 7g fat, 4g sat fat, 59g carbs

SERVES 4

200g (7oz) pudding rice
750ml (1¼pt) whole milk
45g (1½oz) caster sugar
✣Dash of vanilla extract, optional
✣Raspberry jam, to serve

1 Add the pudding rice, milk, caster sugar and vanilla extract to a heavy-bottomed pan, then mix to combine. Stir over a medium heat until it comes to a simmer. Turn the heat down to low and gently cook for 30-40 mins, until the rice absorbs the liquid, and you have a rich, creamy pudding.

2 Serve the pudding with the raspberry
