Marcus Wareing’s whole roasted

Cauliflower is a delicious and very versatile vegetable. We often roast it and serve as an accompaniment, but it’s also great as a main dish. Here, it keeps its shape and absorbs a delicious satay marinade.

■ Serves 4 as a main or 6 as a side ■ Prep 15 mins ■ Cook 1 hr VEGAN

1 large cauliflower, outer leaves removed and stalk trimmed
50g toasted unsalted peanuts, chopped small bunch of coriander, leaves and stems finely chopped
