Citrus Salad with Chorizo and Crispy Fried Egg
SERVES 2
INGREDIENTS
1 lemon
3 oranges
60ml olive oil
100g fresh chorizo, diced
4 garlic cloves, sliced
2 free-range eggs
Sea salt and freshly ground black pepper
TO SERVE
Extra-virgin olive oil
Microherb leaves such as amaranth, pea or radish
Sourdough toast
METHOD
1 Remove the peel from the citrus fruits and cut into segments. Arrange on plates.
2 Heat 2 tblsps of the olive oil
