A MENU FOR MIDSUMMER

Cornwall is beautiful all year round and the way it changes with the seasons is stunning. In autumn and winter I love the ruggedness, the way the sea swells, and the empty beaches. In spring, when the weather starts to warm up, both the colour of the trees and the sea is in constant flux and the wildflowers start to bloom. Who doesn’t love summer though? I feel that Cornwall really owns this season.

Over the next few months I’m looking forward to getting out on my road bike and cruising along the roads of the North Cornwall coast in the summer sunshine. While we love stopping at local cafés and pubs on a ride, sometimes it’s nice to pack something yourself too and sit atop a hill enjoying the breeze and catching some rays. I love a Greek salad which we use when they are at their best. You can also make the vinaigrette in advance and use it for drizzling over other salads and fresh pastas.
