Potluck Pleasers

PERFECT SKILLET PEAS

Makes 6 to 8 servings

8 slices thick-cut bacon, chopped
1 small yellow onion, chopped
2 cloves garlic, smashed
1 pound shelled fresh crowder peas
3 cups low-sodium chicken broth
1 teaspoon kosher salt
½ teaspoon ground black pepper
¼ teaspoon crushed red pepper
3 dried bay leaves
1 tablespoon apple cider vinegar

1. In a 10-inch cast-iron skillet, cook bacon over medium-high heat, stirring occasionally, until crisp, about 10 minutes. Remove bacon using a slotted spoon, and let drain on paper towels, reserving 2 tablespoons drippings in skillet.
