12 large raw head-on prawns2 banana shallots, sliced3tbspn massaman curry1 x 400ml can coconut milk200ml vegetable stock4 kaffir lime leaves1 dried red chillior 1 tspn chilli flakes1tbspn tamarind1tbspn soft brown sugar1tbspn fish sauce½tspn ground cinnamon75g green beans, trimmed125g spring greens, thinly sliced1 blood orange (or normal orange), juiced1 lime, juiced Handful of fresh Thai basil, torn or choppedJasmine rice, lime and orange to serve
