Cheesy soda bread croutons

Heat the oven to 220C/200C fan/gas 7. Rub 1 whole garlic clove over any leftover stale slices of cheese, oat & spring onion soda bread from p86. Tear into small pieces or cut into cubes and toss with 1 tbsp olive oil. Put on a baking tray and bake for 10 mins until golden and crisp.

New potato & salmon hash

Crush any leftover from the one-pan watercress-stuffed salmon recipe on p28 and fry in in a frying pan until crisp. Flake any leftover and stir through the potatoes. Warm through and serve with poached eggs.
