RUM & RAISIN BREAD & BUTTER PUDDING

SERVES 6-8

½ cup (125ml) dark rum
1 cup (170g) raisins
450ml milk
450ml pure (thin) cream
½ vanilla bean, split and seeds scraped
Pinch of cinnamon
5 eggs, plus 4 extra egg yolks
125g demerara sugar, plus ¼ cup extra
75g unsalted butter, softened, plus extra to grease
400g slightly stale brioche loaf, cut into
12 thick slices
Vanilla ice cream, to serve

Preheat oven to 160°C. Grease a 3L-capacity ovenproof dish with the extra butter and set
