Eggs-tra SWEET IDEAS

Easter egg cake pops

MAKES 16 PREP + COOK TIME 1 HOUR

1 (350g) frozen chocolate cake (do not thaw before use)
500g white chocolate melts
16 lollipop sticks (see notes)
Icing flowers, small icing flowers, to decorate

ROYAL ICING

1 ½ cups (240g) icing sugar
1 egg white
½ teaspoon fresh lemon juice
Yellow, green, pink food colouring

1 Cut 16 slits in the top of the lid of a weighted egg carton. If you have a few cartons, cut holes in the dividers (see picture). Or use a polystyrene square. Line a large baking tray with baking paper.

2 Break cake into pieces and process in a food processor.
