POTATO GEM caprese frittata
Cool autumn nights call for easy comfort food, and these cosy baked dinners are an invitation to the dinner table no-one can refuse! All of these meals are made with stick-to-your-ribs hearty ingredients, loaded with oozy cheese, warming spices and a healthy balance of fresh veg. We’ve used shortcut ingredients – like potato gems as a frittata crust! – to make them really simple to whip up after a long day.

2 tbs olive oil
1 red capsicum, deseeded, thinly sliced
3 garlic cloves, crushed
1 tbs finely grated fresh ginger
300g (1½ cups) long-grain white rice
1 tbs brown sugar
500ml (2 cups) Massel Stock Chicken Style
60ml (¼ cup) soy sauce
1½ tbs cornflour
350g beef scotch fillet steak, excess fat trimmed, thinly sliced
150g snow peas, halved
