1 (14-ounce) package andouille sausage, cut into ¼-inch slices
1 cup chopped red bell pepper
1 cup chopped green bell pepper
½ cup chopped yellow onion
2 cloves garlic, minced
¼ cup all-purpose flour
1 teaspoon kosher salt
½ teaspoon paprika
½ teaspoon ground black pepper
¼ teaspoon dry mustard
⅛ teaspoon cayenne pepper
3 cups whole milk
2 cups shredded sharp white Cheddar cheese
1 cup shredded Gruyère cheese
1 (16-ounce) package elbow pasta, cooked according to package directions
